Chicken Sour Cream Enchiladas

4 chicken breasts cooked and shredded
1/2 soup can chicken broth
1 can cream of mushroom soup
1 can cream of chicken soup
1 cup sour cream
1 can diced green chilies
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded cheddar cheese
corn tortilla's torn in 4th's

Mix together soups, sour cream, chilies, and chicken broth. Layer alternately in a 9x12 inch pan with tortilla's, chicken, soup mixtures, and cheese. Make at least 2 complete layers and top with cheese. Bake at 350 for 30 minutes.

Chocolate Crinkle Cookies

1 1/2 cup sugar/ 1/2 cup oil/ 9 tble cocoa blended with 3 Tble oil
2 tsp vanilla/ 3 eggs/ 1/4 cup milk/ 2 cups flour/ 2 tsp baking powder
sifted powdered sugar

Combine first 4 ingredients. Beat in eggs 1 at a time. Stir in milk. Stir flour and baking powder together and combine with other mixture. Chill for 1 hour. Roll into 1 1/2 inch balls. Coat completely with powdered sugar. Place on greased cookie sheet. Bake at 375 for 10 minutes. Makes approximately 4 dozen. These are really attractive cookies for the holidays.

Tanya's Taco Soup

1 lbs hamburger
1 pkg taco seasoning
1 can sliced potatoes (drained)
1 can kidney beans(drained)
1 can corn (drained)
1 can diced tomatoes (not drained)
Campbell's tomato juice

Add in's:
shredded chedder cheese
tortilla chips
sour cream

Cook hamburger til done. Drain. Add in taco seasoning. Mix well. Place hamburger mixture in crock pot. Add in kidney beans, corn, tomatoes, and sliced potatoes. Pour in enough tomato juice to make soup how you want it. Salt and pepper to taste. Cook in crock pot until hot and boiling. Can leave in crock pot all day on warm. You can also just cook it in a saucepan but it is more flavorful in a crock pot. Top with cheese and sour cream. Eat with tortilla chips.

Note: You can fluff it up with other canned veggies. I like carrots, green beans, and lima beans, but then my kids won't eat it!

Darlene's Apple Dumpling Pie

Dumplings:
2 cups flour/ 3/4 cup shortening
2 tsp baking powder/ 1 1/4 cup milk

Filling:
2 cups water/ 2 cups sugar
1 tsp cinnamon/ 2 Tble margerine

Preheat oven to 375. In a saucepan mix filling mixture and bring to a boil stirring constantly as not to burn to pan. Set aside. Cut in flour and shortening. Mix remaining dumpling mixture then place on rolling sheet on approximately 1/2 cup flour spread out. Knead in flour to work dough (about 1-2 cups, it should still be sticky but workable). Roll out into 4 strips (sized to fit: 1/2 of a 9x13 inch casserole pan per there are 2 strips on top and bottom) Place 2 strips side by side on the bottom of 9x13 pan. Place fruit (apples peeled and sliced enough to fill pan to 3/4 to top). Sprinkle with 3 teaspoons of sugar and 1 teaspoon of cinnamon. These can be fresh apples (boiled for 30 minutes to tenderize) or they can be bottled apples. You can use peaches also. Place 2 other dumpling layers on the top of fruit. Then pour filling mixture over whole pie. It should saturate the whole dumpling and have free standing liquid in pan. Place on a cookie sheet (as not to drip in oven) and bake for 30 minute. Let cool. It will set as it cools. Refridgerate mixture if you want totally set. It still is very moist and has a slight bit of liquid in the bottom of pan. Serve warm with vanilla ice cream.

Grandma Sparks Homemade Chicken Noodle Soup

4 eggs
1 Tble milk
1/2 tsp salt
flour
pinch of baking powder
chicken broth (large can enough to fill the saucepan to 2/3 of pan capacity)
carrots and celery (2 carrots and 2 stalks of celery boiled for 30 minute in broth mixture)
chicken (4 breasts boiled and shredded)

Beat all ingredients together. Add enough flour to make a stiff dough. I have found it to be approximately 20 heaping tble of flour (haha). Roll out on cookie sheet. (I place flour in a 11x15 pan and just roll it out on that, it's easier) Just make sure to coat the whole bottom of the pan with flour. You may have to add more flour. It should be stiff and slightly dry. Roll out until very thin. Allow to dry for about 30-60 minutes. Cut with pizza cutter into thin strips per they expand double as they cook. Drop individually into boiling chicken broth mixture.

Tanya's Breakfast Casserole

3 cups shredded hashbrowns/ 3/4 cup shredded cheese
1 cup cooked diced ham/ 1/4 cup chopped green onions
4 eggs/ 1 can evaporated milk/ salt and pepper

Place potatoes in a 9x13 in pan. Sprinkle with cheese, ham, and onions. Beat eggs, milk, salt, and pepper. Pour over the top of potato mixture. Do not mix. Cover and refridgerate overnight. Bake at 350 for 1 hour. Serve while hot. It is sort of a breakfast quiche. This is soooooo good! We have this every Christmas for breakfast with blueberry muffins! Is is so easy and so good!
note: I also have put bacon or sausage in it but it really is better with ham.

Wendy's Jello Popcorn

3 bags buttered microwave popcorn
1 cup sugar
1 cup Karo syrup
1 cube butter or margerine
1 small pkg of sugar free jello any flavor

Cook popcorn according to directions. Remove all unpopped kernels. Boil all ingredients for 1 minute only. DO NOT OVERCOOK! Mix into popcorn. Yummy!
